does anyone know some good zuchinni recipes to try out on our camping trip?  we are overrun with the darn things!   we're leaving for a 5 day camping trip tuesday, I've been picking zuchinni daily and pawning them off on neighbors and coworkers.. quickly running out of people to give them to- this is worse than friendship bread!

I"m looking for some recipes that are quick and easy and I can make while we're camping out.  or maybe should just cut them up and feed them instead of hay??  havn't tried them on the horses yet

I don't eat zuchinni so I don't have any recipes for you,  but you could try the local homeless shelters and food bank and see if they want them.

One of my favorites that I use camping and at home is take canned tomato sauce, canned garlic, canned sliced olives, fresh jalepeno(sliced) (if you like em)and fresh bell peper(sliced). Cook all the ingredents in a crock pot for 30 minutes and add the zuchini (sliced or diced) for 10 minutes. It is like having spaghetti but different. It keep really easy cause nothing has to be refrigerated. We take this alot when we pack into the back country. BTW - horses do like zuchini. We left ours out by our picket line and my boy helped himself.

Maybe you have already tried this  but will give it to you anyway. Slice  a big one  (I mean one of those that are about 10" long)  length wise and hollow out center.  Then you can put a hamburger, onion, celery, egg, and crackers (almost a meatloaf ) in the hollowed out part and cook on grill until meat is done. Take some zuchini bread along. You also might try searching zuchini recipes on line.

thanks for the recipe ideas! think I'll try the crock pot recipe and modify it a little I found out yest. my horses will eat them as well.    They didn't seem interested at first but a few hrs. later the zuchinis were were all gone...   One of my friends who is taking care of the horses while we're gone said she'd love to take some also.

Slice them on the diagonal, place on grill until browned, turn and brown....delicious.....The browning carmelizes the z and is quite amazing.

Slice them about 3/8 thick. Brush them with extra virgin olive oil and grill until golden. If you like you can sprinkle them with garlic salt as well.
