I'm am in the process of putting in a weekend package in my trailer. I've completely gutted all the old paneling and insulation due to a old window leak. It was already wired for an AC with two additional outlets. All the interior lights were 12v running off the auxiliary wire going to the truck battery. I'd like to put in a AC, refrigerater & microwave, with outlets to possibly put in a tv/DVD player and coffee pot. And maybe a sink. What size breaker box and wire would I need for this? The previous box that was in it, only had 2 breakers on it. Also, I'd like to keep 3 small interior 12v lights running off the truck for when im not plugged in, and additionally install 2 dome lights to run off the 120 v hookup.

Look at Progressive Dynamics 4045 at BestConverter.com. Gives you all you need in terms of breakers and circuits. You will need a house battery and a bunch of other things but that is a good place to start.
