If I isulate the aluminum roof in the horse area with one inch foil faced hardboard insulation and foil tape and leave the insulation uncovered , not panneled over , will the foil surface of the insulation create condensation and water dropletes. I just thought that if this is done right with care and attention to detail, it would create anice finish and cut down on both cost and weight.

No, because the warm moist interior air, will not be in direct contact with the cool exterior surface of your trailer. The foil face will be your vapour barrier, and the insulation will prevent the air between the two surfaces from being exchanged.

Actually, if you take your measurements accurately, you can cut the insulation so that it is very tight between the ribs. Then, use the metal tape (not duct tape) to tape over the edges to the ribs.
Of course, if you have no ribs in your ceiling, you'll have to glue it.
