I'm setting my dressing room to have 110 only. do I need a water pump if I don't have water tank and rely on outside sources for water and pressure? I am going to install a sink and eventually a shower. i plan to have a 2 1/2 gal. on demand water heater under the sink. Is this doable?

With external water source I see no reason for a pump. You may have low water pressure sometimes, but as long as it will flow out of the faucet......
Going to have to watch the amps on the WH with either a tank less or on demand, point of use.

Many outside water sources provide a decent water pressure. In fact, many RVs have a pressure reducing regulator, to maintain a system pressure of ~50 PSI when the external pressure is higher. As long as the external water is constantly available when you need it, you really have no need for a pump.
If you are going to install a WH, make sure it is wired, so it cannot heat if there is no water pressure. Otherwise the unit can be damaged.
