I have a manual jack, and with the weight of the horse trailer - it is hard for me to do. I am thinking about getting power jacks.. Do I buy them according to the weight of my trailer? Empty or max weight? Would it be better with a set of 2 jacks instead of the one? (our 5er had double legs)

Sarch "hydraulic jack" under the HTW search feature.... There's a half a day reading there on trailer jacks... Armstrong, electric, hydraulic.....
