I would recommend insulating. I insulated my Titan steel trailer and reduced the inside temperature by 8 degrees F. I used 3M 77 spray adhesive and aluminum bubble aluminum insulation from Lowes. I cut strips of insulation to go between the roof bowes and sprayed adhesive on the roof and insulation. It never came loose.

Insulating the aluminum roof in the horse area will definitely keep the trailer much cooler in the summer, and will keep the roof from dripping in cooler (fall and winter) weather. Foam board is the most used type of insulation, as you can purchase it in the same thickness that your roof bows measure. We have taken trailers on trade that the owner used foam board and silver tape to hold it to the roof bows. The silver bonding tape must be good stuff, because some of it had been there quite a while, and hadn't let loose. Good luck on your project.

I would recommend the foam board as insulation. I also recommend putting aluminum sheet over the foam board once you but it up (looks nicer), that's what I would do anyways.
