I had one of my horse trailer tires get shredded. The other 3 are in good condition, but not new. It's a 2 axl, 2 hrs straightload. Can I replace the just the one tire? Or do I need to get at least two for even wear?

You might get by with replacing just 1, but you could have 3 others just getting ready to fail, just as loveduffy has said check what the reason for the failure is and go from there.

Check the age of the tires by the code on the sidewalls. Do a "search" to find out how if you don't know. If they are less than six or seven years old, they will be good to go, but will need replacing in the future.
Replace the damaged tire with a new one of the same size, profile and rating. If this is not possible you should replace them in matched pairs.

Thank you! I tried to find a code, but could not find a DOT on the outside wall. And cannot get under the trailer to see the other side. I contacted the previous owner, and they said the tires are about 8 years old. Better to replace them all then, right?
