Built mine from the ground up, had an electrical, plumbing and design plan.  As Gard suggests, you really get your best ideas from looking at new trailer layouts.  Beware nothing is square in a tapering GN and can be frustrating.  It's not like renovating a house! 

You can see what I did relatively cheap and working weekends/nights in less than 2 months to completion.

What do you use with your 12 Volt that lasts 3 dys? just lights? or Ac or heat?Also does the roof ac/heater take more electricity then a space heater plugged into a socket? Thanks

we have a dual battery set up, we run the furnace, water pump, lights, a tv for a couple hours before sleep, there are just 2 of us and we stay out side most of the time.

the ac would take shore power or a generator, most places we camp has no electric.

A good friend of mine started a page on Facebook "Horse Trailer Conversion". LOTS of excellent ideas. She converted a B/P to a L/Q from scratch. Lots of posts and pictures.
