Several of you have stated you keep your generator in the bed of your pickup. How do they do in weather? Can they tolerate rain? I am looking at the Honda's as well. I will keep it in my garage when not using for camping but not sure how they do if it rains or snows.

Seems to me if you leave your unit out in the open, it is an invite to have it stolen. Putting it in a "tool box" enclosure is an option, but doubt one would fit in a tool box. May be a pain, but I'd remove mine and store in barn or garage. I also drain the fuel from mine f I am not going to use it for a few weeks. ( I also have a built in one on propane in the Liv qtrs)I only use my small genset when using my BP trailer, and when camping in the backwoods with my horses. ( My 4 horse would NOT FIT in most off road areas!)

Honda has covers for the 1,2, and 3000 generators. Have to remove when using the gens. But, could relocate the units if using during bad weather perhaps lowering your tailgate and placing the units under that. Provided your truck is located away from the trailer.

I use a cable lock through the Honda's metal handle and a bed attachment point. There isn't a true thief proof solution but it does discourage crime of the moment. Plus at 140 pounds it's not pocket sized. I use my tractor FEL to lift it into the truck bed. (Made a rope sling that easily & securely attaches to the handles. I'll post a photo if forum people are interested)
As for a weather shield, the Honda seems to shed rain well. I've thought of a flat shield while in the truck that would keep the rain off, but it's been a low priority.

My vote is twin 2000s as that is what I have for my camper. I also have a couple Champion generators that I used to use when I only had one 2000. Nine times out of ten I only used the Honda as it was SO much quieter. The 3000 is a beast at something like 140 pounds. The twins are considerably lighter and easier for me to maneuver. One stays at home unless the forecast is for really hot and muggy. Still, after having two generators stolen at home, and a Champion almost stolen at a horse show, they get chained up.

Still going back and forth on which one. I like the ability to do remote start on the 3000 but the lighter weight is a big draw. I will definitely chain them up. Too bad we have to do that!

First, a single 2,000 watt will not have enough power to start an AC. The starting watts required is more than double that of it's running wattage. To me, having two 2,000 watt units is more complicated than needed though it offers some flexibility.
We store our 3,000i on the floor of the tack area. Since our trailer has a ramp I roll it down and then situate it alongside the tandem wheels on the backside of the trailer. It's secured to the leaf spring with a heavy cable and lock. It has plenty of power to start and run the AC though you might trip a breaker if you try to use the microwave at the same time. It's nice and quiet with pretty good run time on the built in tank.
