Elk meat is very good. You can't tell the difference between it and beef. I rasie and eat beef and I hunt and eat elk also. Brats are also very good made out of elk. No offense to anybody that wants to do this but I would rather go out and shoot one.

I love elk meat, also... but to me it has a different texture.. almost liver-like... While I don't like liver, I DO like elk.. Also, one of the best chicken fried steaks I ever cooked came off of a Wyoming antelope which had been eating sage.. You could taste the sage in the meat... Man, it was good!...A lot of people consider a pronghorn a "trash" game... I keep telling my husband that he needs to book some more hunts... The last several he went on, he brought back either racks or hides (bear), but no meat..

We raise elk and other exotics and have a hunting range. I don't like beef or pork very well but really like elk. According to USDA it compares to chicken in fat, calories, and cholesterol :-)

Lets see. $500 to $750 for a cow, plus the cutting and wrapping. vs $45 to Utah and I cut it up. I think I'll just shoot a wild one here at home. I just don't need the guarantee, They are not that hard to hunt. Getting a tag for a trophy hunt is tough, but getting an elk in the freezer is no big deal.
I buy a Spike tag every year and usually draw a cow tag every other year. So we always have elk in the freezer. It is very similar to Beef other than how lean it is. There is no fat marbled into the meat. Wild game like elk and deer carry all their fat just under the hide vs marbling into the meat like domestic cows. So if you over cook it, it will be tough. I like Elk Steaks or Roast. I don't care for the burger, something about the flavor when add suet to the elk meat to make hamburger. I usually take the small pieces that would go into burger and throw them in a crock post and slow cook. Add a BBQ sauce and serve as Sloppy Joes.
I can buy a 2 year old Bull Buffalo for $700 and that puts out a lot more meat and that is also a very lean meat.

We used to have it state inspected and commercially processed and sold it but it got too expensive to process individual packages to sell. I don't know how close you are to Riverside, IA but the locker there has it.

We can now buy buffalo meat in our grocery store.. I bought some on sale last week.. It was @ $3.49 lb which was cheaper than extra lean beef I ususally buy... I made burgers with it.. They were good, but perhaps a little milder in flavor than beef... or perhaps I didn't quite season it enough.. Painted horse.. I wish we lived close to easy accessibility to hunting.. We've not been able to find a deer lease within sane distance, so for us, hunting is either booking a hunt and then flying or driving out of state (last several were in Canada and Alaska.. I don't know where my husb plans to try to go this year). Then buying your tag, tipping your guide, transporting meat home or processing it up there and then transporting it home.. Not so cheap that way..Still, we can look forward to retirement out west somewhere.. I'm wanting to go hunting this year.. Santa got me a bow last year and I'm not too bad with it.. I'm anxious to see what I can do with a LIVE deer as a target!
