It is nice to be able to run the fridge on propane in my opinion.
One of my trailers I have a small electric ( house style ) refrigerator in and it works well.

A house style refrigerator uses refrigerant and a compressor,  RV style refrigerators work off of absorption ( no compressor )   they use the heat generated from the electric device or propane to heat and move the refrigerant.

It is vital for the absorbtion fridge to be level for it to work.  Are you keeping it level at all times while parked?

Before abandoning your Norcold ( a nice little fridge ) read the owners manual and follow directions. Problems are easily diagnosed using some online resources.

Also, without knowing the age of the fridge.  It is possible that the orfice is bad and it isn't burning efficiently therefore not cooling.  Can you see a clean blue flame?

if refrigerator doesn't get cold enough try adding small fan blowing upward behind refrigeraor to remove the heat thru top and also making sure the vent is clear
