I really like everything about our trailer except I'd prefer to have a dinette instead of a sofa.  Obviously I could trade it in, but has anyone ever converted their Sofa to a Dinette?

Look on Amazon for an RV table with pedestal so you can remove it when you want to... I hate our dinette, wish I had a large lounge sofa instead of jacknife sofa/dinette....   https://www.amazon.com/DetMar-12-1106C-Removable-Rectangular-Marine/dp/B0000AZ89Y/ref=sr_1_1?ie=UTF8&qid=1501171694&sr=8-1&keywords=rv+tables

Water tank, pump, electrical panel, plumbing is all under my sofa.  I wouldn't want to have to move alot of stuff,  buy a TV tray and call it good.

We change them out quite often.  The level of difficulty really depends on how your trailer is built and what systems the manufacturer put under the sofa/dinette.  Some manufacturers put water pumps, tanks or furnaces under there.  Others just leave it open for storage.  If you have a model that is still being built I would call the factory and talk with someone in engineering or production.
