I don't want to insulate under my mattress on the inside because I don't want to lose any more space. I thought by insulating under the goose neck it would keep it warmer on the inside. The rest of the living quarters is insulated.

I know in this part of the country a lot of home insulating companies are spraying a foam insulation onto the rafters of many homes. They are spraying either open cell or closed cell insulation. The closd cell has a higher "R" value per inch and acts as a vapoer barrier which probably won't be bad under the gooseneck. It sticks very well to wood but I would suggest inquiring about it sticking to metal. They only problem I see is that it would be such a small job for an insulator. I would buy those mightly light stall pads they sell and put them under your mattress, also I would put polyeurothane foam on the underside.  They sell it in sheets at the hardware store, it is either blue or purple, then fill in the edges with expanding spray foam.   I would then cover it with a thin sheet of aluminum or FRP board.  make sure you account for moisture, either try to seal it entirely or I personally would leave a lot of drainage holes. YMMV
