I'm hoping someone can help me narrow down this problem - will take both truck & trailer in to be looked at.

This weekend, when I braked at 40+ miles per hour, if I was braking harder like going down a hill the truck pulled to the left (this is a new development) - maybe it was more that the back end was going right a bit?  Pulling BP 2H with one horse on left with 93 F250.  I tried to recreate it with the truck alone and felt a little bit of it when I braked hard on a dirt road - couldn't feel it on pavement at all.  I assume it's possible that the trailer could be accentuating the behavior?

First place to look is at front end parts. Tie rods, drag links, balljoints and such.  If all checks out well you may have a sticky caliper or dry slides causing your problem.

I agree, check the front end, especially the calipers. I had the same symptoms an a 4Runner I drove while in college (no trailer pulling), and it turned out to be a bad front caliper.
