If you do a search there was a post about this a while back.  There were quite a few links and recipies listed.   Here's one thread.

If you go to yahoo groups and type in "dutch oven cooking" you will get info and recipes on DOs. Happy cooking. You may even find a chapter to join near you.

I would just like this danged drought here in my part of Texas to end so I could just be able to think about building a campfire. Impossible with the mandated outdoor burning ban and no hay anywhere either.

Chicken and Dumplins in the dutch oven is simple. Put the chicken in, add salt, pepper and water, (some diced onion if you like), then a layer of canned biscuits. Cover and hang over the fire for a couple of hours. YUMMMM!

RIDE ON!

I don't use a campfire to cook with. I use charcoal briquettes. you can control the heat better.

No kidding.  We finally got some rain last week.  Hay is now down to $6-8 a bale.

Try this for a quick easy supper........

2 lg cans Hormel Chili

1 tube Grands biscuits

Shredded cheeses

Line your DO with heavy duty foil, leaving enough to fold over the top when full. Pour in the chili ( I actually make mine at home, but Hormel works well, too), top with Grands, then cover it all with the foil flap. Place the lid on the DO and bury the whole thing in a bed of coals- no flames or it'll scorch!!

Leave in about 30 min and check. Cover with shredded cheese and enjoy. This is especially good on a cool fall evening.

BTW, those sites the others have given are REALLY good!

Bon Appetit !

Sounds good, but I think I will just put it over some coals and put some on top. I usually don't have enough to bury it in.  And I don't want to have to dig a hole to sit in down in.

Almost any casserole can be prepared at home before you leave, using disposable aluminum pans and then heated over the fire. Also, those frozen lasagnas. I have even made peach cobblers in individual size disposable pans and heated them over the fire. This way, there are no dishes to wash afterwards!!

If you have access to electricity, you can take your crockpot and start a pot of beans in the morning and they're ready for dinner time. Cornbread can be made at home and placed in foil to be heated over the fire. After you've finished the beans, you can then heat dishwater in the crockpot. But then we're back to doing dishes. AARGH! I'm on vacation!!!!

RIDE ON!

The breads and rolls are to die for!!!!!!!!!!! You can check out on my webpage the cornbread and dutch apple crisp I did OVER A CAMPFIRE.
