just wanted to know if it was safe to make a 1 inch hole with a hole saw in the I beams underneath the trailer just to run my hot and cold water line I plan on using grommets so the metal doesn't cut the pipe...... all in put is welcomed...

any hole you cut in metal has to weaken it, I looked and our C&c is underneath the I beams.If you run them through or under be sure to pad the pipes so they will not rub.

I guess my next question for you is how much room do you have from the ground to the bottom of your trailer? I am betting where you need to run water lines is no where close to the ground for clearance. I would do my best not to cut holes in the beams.

Most horse trailers now don't run the plumbing outside of the lq area, they use something to cover the lines where they go past doorways and then through the cabinets. If they are run outside they will be more prone to freezing. The less holes in the floor of your trailer the better. Build a boxed cover to conceal the pipes, then cover it with carpet. If pictures would help I can get some for you.
