I am about to begin the conversion of a 2' short wall dressing room to a living quarters (weekender). My question is can I use roll insulation instead of insulation panels?

If by roll insulation you're speaking of fiberglas... yes you can use it. But if the trailer gets a leak the insulation will be soaked. (All trailers will eventually get a leak) I used foam boards.

One of my first trailers I used fiberglass bat insulation because it was cheap. It was a pain to work with and I lost space due to the wall thickness needed for the insulation. If you compress fiberglass insulation it loses it's effectiveness, where as foam board won't take up the space and you still have great thermal barrier.

I would not use the fiberglass insulation that could potentially come loose from the sheathing as fiberglass in the air is very bad to breath as well as the soak factor (ruins your wood paneling). They make a very easy to use flexible roll insulation you can find at Lowes or Home Depot that works very well. It is more expensive than the foam boards. I would recommend foam boards for the straight areas and the flexible roll for any curved or hard to fit areas. You can easily cover up where you cut that roll with aluminum tape.
