We use a rope halter for everything since they are so quick and easy.... But does anyone have experience hauling in one? Would you suggest it? Also do you knot off the halter end or put a safty knot? I always tie a safty knot but wasn't sure what to do with the halter tie. Thanks.

Hi and Welcome.
I don't, I wouldn't - - well, maybe in conjunction with a Velcro trailer tie.
You NEED something to break or breakaway.
Safety knots can't be untied in the trailer by the horse, i.e. he could hang himself and not be able to self rescue. I only use safety knots when I know there will be a human available to release them if/when there is a problem.
EDIT:
I changed my mind.
Not EVEN with velcro tie, it could still hook over "something" and fail to break.
;END EDIT

I use them on all my horses I either throw the lead line over their backs or just through the tie ring in the trailer and I tie the halter part regular

I use rope halters all the time. don't even own a regular halter. for hauling will loop the rope over the horses neck & tie the excess w/ quick release knots. if I tie the horse in the trailer will use trailer ties w/ quick release snaps on either end. Horses being horses they will try to injure themselves no matter how careful you are. I ALWAYS keep sharp knives w/ in easy reach (sounds like something a mass murderer would say?) there is a knife in both front doors of the truck, one in the DR of the trailer and 2 in the tack compartment.
