We stayed in Groom Creek Horse Camp last year. The place is well maintained and has some nice trails.

Tombstone Livery just outside of Tombstone AZ. is a good place to camp and ride the desert.  You can ride your horse in to Tombstone through the high desert in about 45 minutes.
