What kind of bolts or screws should I use to install my Cam Latch Hasp onto my horse trailers back doors?

I'd suggest Grade 8 (stainless) bolts. A couple of years ago I lost a cam lever when the original bolt broke. Have since replaced with Grade 8 bolts. If you don't have a source in mind, Menards and TSC do have a selection.

Stainless is definitly the way to go,but there are no gr 8 stailess fasteners.Stainless fasteners fall some where between gr 4 and 3,they actually do not sarry a "grade " mark.

Go to your local Fastenal store, they're the experts on fasteners of all kinds and sizes.
